Seaweed Crusted Crispy Skin Salmon
By Amanda Wong Rainbow Seaweed Chickpea Miso & Sesame Seasoning, Rainbow Seaweed Salt

We secretly like to call this the “Bacon Dish of The Sea”.
Firstly, it’s because the crispy skin of the salmon reminds us so much of the texture of crispy bacon.
Secondly, it is so easy to make, just like frying bacon on a pan. All you need is some oil, seasoning and a really hot pan.
But, most importantly, we use our Rainbow Seaweed Salt which contains a type of seaweed called “Dulse” in this recipe. Dulse is a type of red seaweed and is known to taste like bacon when it is cooked.
We love to pair this flavorful fatty fish with a refreshing salad on the side.

Directions
Crispy Skin Salmon
1Pat the skin of the salmon with a paper towel until dry.
2Drizzle the pan with oil. Make sure you put enough oil so that the base of the pan is fully coated. Turn on the heat to medium high.
3Sprinkle the Rainbow Seaweed salt and black pepper on the skin of the salmon. Pat it down so that it sticks.
4Once the pan is hot, place the salmon into the pan skin side down.
5Press the salmon down with a flat spatula so that the entire skin is flat against the pan.
6Cook for 6 minutes or until the salmon is 3/4 cooked. You should be able to see some color change on the side of the salmon. The skin of the salmon should have also crisped up.
7Flip the salmon over to cook it on its flesh side for another 2 minutes with medium heat.
8Right before plating it, flip it back onto its skin side and cook it for another 1 minute for the skin to be extra crispy!
9Serve the fish skin side up, with a salad on the side.
Grapefruit & Rocket Salad
1Mix the olive oil and grapefruit juice in a small bowl.
2Mix all of the ingredients and dressing in a big bowl.
3Sprinkle the Rainbow Seaweed Seasoning and black pepper on top before serving.
