Grilled Apricot and Feta Salad with Seaweed Sprinkle

Serves 2

Ingredients

3 apricots, halved and grilled
1/4 block of Dodoni Greek feta
2 cups of rocket
1 tb extra virgin olive oil
Alg Seaweed Bush Tucker
2 tsp Za’atar

Steps

  1. Grill apricots on the BBQ or cast-iron skillet for about 45 seconds on each side then set aside to cool.
  2. On a serving plate, layer rocket on the bottom then arrange apricot throughout the plate.
  3. Use your finger to break up the feta block and evenly distribute feta on each of the apricot halves.
  4. Drizzle olive oil, sprinkle slightly crushed walnuts, Alg Seaweed Bush Tucker and Za’atar on salad.
  5. Serve immediately, with a lovely grilled chicken or honey soy tofu!

Notes

This recipe is just fine without a dressing as the grilled apricots come rather juicy. If not, some extra virgin olive oil will do just fine!
