Ingredients
3 apricots, halved and grilled
1/4 block of Dodoni Greek feta
2 cups of rocket
1 tb extra virgin olive oil
Alg Seaweed Bush Tucker
2 tsp Za’atar
Steps
- Grill apricots on the BBQ or cast-iron skillet for about 45 seconds on each side then set aside to cool.
- On a serving plate, layer rocket on the bottom then arrange apricot throughout the plate.
- Use your finger to break up the feta block and evenly distribute feta on each of the apricot halves.
- Drizzle olive oil, sprinkle slightly crushed walnuts, Alg Seaweed Bush Tucker and Za’atar on salad.
- Serve immediately, with a lovely grilled chicken or honey soy tofu!
Notes
This recipe is just fine without a dressing as the grilled apricots come rather juicy. If not, some extra virgin olive oil will do just fine!
