Ingredients
300g peeled prawns*
1.5 tsp Rainbow Seaweed Flakes
2 cloves of garlic, minced
1 Tbsp extra virgin olive oil
1/2 cheek of mango, cubed
Parsley for garnish
Steps
- In a mixing bowl, marinade prawns with Rainbow Seaweed Flakes, garlic and extra virgin olive oil for 20 minutes.
- While the prawns and marinating, prepare the mango.
- BBQ or cook prawns on a preheated grill pan until cooked.
- Transfer prawns into a mixing bowl and mix through mango.
- Transfer prawns and mango salad to a serving plate and garnish with parsley.
Notes
*Consider buying prawns with shells. After peeling them, use the prawn shells to make prawn oil and prawn broth for other dishes!
