Seaweed Marinaded Prawns and Mango Salad

Serves 2

Ingredients

300g peeled prawns*
1.5 tsp Rainbow Seaweed Flakes
2 cloves of garlic, minced
1 Tbsp extra virgin olive oil
1/2 cheek of mango, cubed
Parsley for garnish

Steps

  1. In a mixing bowl, marinade prawns with Rainbow Seaweed Flakes, garlic and extra virgin olive oil for 20 minutes.
  2. While the prawns and marinating, prepare the mango.
  3. BBQ or cook prawns on a preheated grill pan until cooked.
  4. Transfer prawns into a mixing bowl and mix through mango.
  5. Transfer prawns and mango salad to a serving plate and garnish with parsley.

Notes
*Consider buying prawns with shells. After peeling them, use the prawn shells to make prawn oil and prawn broth for other dishes!
