Bonito Sesame on 64-degree egg

What is 64 degree egg? Well, it's literally eggs cooked in 64 degree celsius for a long period of time. How long? It usually take between 1-2 hours. Why cook eggs for an hour or two when it only takes 5 minutes (or less) to fry or scramble or max 10 minute to poach or boil one? Well, for people who are eggs obsessed and have lots of time on their hands, using sou vide method to cook. 64 degree eggs are quite special and fancy (great for impressing guests when having them over for breakkie). The outcome? It comes out like poached eggs with silky soft egg white and yolk. The yolk may not be runny depending on the temperature and the duration you sou vide the eggs for but the yolk is definitely creamier and smoother! Oh so hard to describe but so yummy and worth it! Cooking eggs at this temperature requires lots of patience and it's quite hard to achieve in a home kitchen if you don't have the right tools. A sou vide cooker will come in handy in this situation. We used Anova Precision Cooker to make our eggs on this occasion. Preset it to 64 degree Celsius or 147.1 degree Fahrenheit and let it cook for 60 minutes and there you have your sou vide eggs. Here's an easy meal idea for you, Japanese udon in dashi broth, slices of char siu (BBQ pork), crack open a sou vide egg.
