Kingfish Carpaccio with Seaweed and Ponzu Dressing

Products used in this recipe - Alg Rainbow Seaweed Flakes, Alg Seaweed Rainbow Seaweed Seasoning

Serves 4

Ingredients

300 grams of sashimi-grade kingfish fillet
Dressing:
1 tsp of soy sauce
2 tbsp of lime juice
1 tsp of lemon juice
Zest of half a lemon
2 tbsp of mirin
2 tsp sesame oil
1/4 avocado, cut into cubes
3-4 slices of pickled ginger
Alg Rainbow Seaweed flakes
Alg Rainbow Seaweed Seasoning 
Micro herbs for garnish

Steps

  1. Combine juice, mirin, soy sauce and zest in a bowl. Taste to the desired flavour.
  2. Carefully sharpen a knife and cut kingfish into thin slices ~ 0.5cm in thickness.
  3. Arrange kingfish on a plate. Arrange onions, avocado and pickled ginger.
  4. Drizzle the dressing and sesame oil.
  5. Garnish with Alg Rainbow Seaweed Flakes, Rainbow Seaweed Seasoning and microherbs.
