Ingredients
- 1 cup Jasmin rice or brown rice
- 1/2 Lebanese cucumber sliced
- 1/2 avocado, cut into cubes
- 200g firm tofu, cut into cubes
- 1/2 cup shredded purple cabbage
- Extra virgin olive oil
- Rainbow Seaweed Salt
- 8-10 slices of Gaga's Raw Fermented Beet Slices
- 2 tablespoons Gaga's Reserve Kimchi
- A dollop of Umamayo Seaweed Mayonnaise
- Rainbow Seaweed Seasoning

Cook the Rice
Cook the jasmine or brown rice according to package instructions. Once cooked, fluff with a fork and set aside to cool slightly. -
Prepare the Tofu
Heat a non-stick skillet over medium heat. Add a drizzle of extra virgin olive oil and pan-fry the tofu cubes until golden and crisp on all sides, about 6–8 minutes. Season with a sprinkle of Rainbow Seaweed Salt while cooking. -
Assemble the Bowl
- Start with a base of rice in your bowl.
- Arrange the sliced cucumber, avocado cubes, shredded purple cabbage, pan-fried tofu, and fermented beet slices around the bowl.

- Place a dollop of Umamayo Seaweed Mayonnaise in the center of the bowl.
