

Grilled Apricot and Feta Salad with Seaweed Sprinkle

Salad to many consist of lettue, cucumber and tomatoes. While you already have the BBQ on, why not try grilled fruit salads?
Apricots are great for summer BBQ! Especially if they are not too ripe, grilling might be a better idea. There’s something about combining fruit and cheese, it's probably the sweet and savoury. Fig with blue, beetroot with feta, quince with cheddar and of course apricot with feta! This recipe is just fine without a dressing as the grilled apricots come rather juice. If not, some extra virgin olive oil will do just fine!

Directions
1Grill apricots on the BBQ or cast-iron skillet for about 45 seconds on each side then set aside to cool.
2On a serving plate, layer rockets on the bottom then arrange apricot throughout the plate.
3Use your finger to break up the feta block and evenly distribute feta on each apricot halves.
4Lastly, drizzle olive oil, sprinkle slightly crushed walnuts, Alg Seaweed Bush Tucker and Za’atar on salad.
5Serve immediately, with a lovely grilled chicken or honey soy tofu!
