Seaweed Marinaded Prawns and Mango Salad

Prawns are lean complete protein that are versatile and quick to cook. The mango is sweet and balance out the seafood flavour. This combination makes a great side dish or even adding roasted potatoes or rice noodle to make it a perfect main for summer!

1In a mixing bowl, marinade prawns with Rainbow Seaweed Flakes, garlic and extra virgin olive oil for 20 minutes.
2While the prawns and marinating, prepare the mango.
3BBQ or cook prawns on a preheated grill pan until cooked.
4Transfer prawns into a mixing bowl and mix through mango.
5Transfer prawns and mango salad to a serving plate and garnish with parsley.
6Note: consider buying prawns with shells. After peeling them, use the prawn shells to make prawn oil and prawn broth for other dishes!
